It sat for a bout a year. Then in Septemeber of 07 I was questioned why I hadn't used it, so I tried it out. Even without soaking it (which I dodn't do) overnight, just putting the mix on the outside lightly is perfect. I make jerly practically every week, family has come out of the woodwork for this stuff.
